닭도리탕: Spicy Braised Chicken

I first learned how to make this dish when I was living in SF. The foggy days and chilly nights made you want to eat spicy, and warm things to stay cozy. There are a ton of online recipes to make this, but basically you just brown meat, then veggies. Then make a sauce that includes hot pepper paste, hot pepper flakes,  garlic, sugar, sesame oil, soy sauce, ginger, and water and throw everything into a big pot. Let the liquid reduce and then be sure to have lots of rice to have on hand. Recipes call for chicken breasts, but I used thighs because they are the most forgiving when you cook things for a long time.  I cooked a huge pot for some friends and added in some rice cake at the very end. It was a hit! Good thing people have high spicy tolerance around here. 🙂
