It has been hot here. So hot that I really did not have an appetite for much of anything lately. This recipe is supposed to be good for hot summer days. It was part of an “energizing food” series. My father got me this awesome stone pot, and while it seemed a little small for the recipe (overflows of liquid and the like!!yikes!) it still was great to use some authentic cookware. While this picture doesn’t look like it, there IS meat in there. Marinated ground beef is underneath all those sprouts. Almost like a surprise! I think the key though is the sauce you make on the side to top the rice with. The rice itself came out a bit bland, even with the meat. So the sauce I think is totally the clincher to this recipe. (Tho I did like the crunchy bits of the rice!)
Rice isn’t always too forgiving as leftovers. I chose to later do some Kimchi Fried Rice with some of the leftovers. If there was one thing about this recipe…the resulting amount is HUGE. There definitely needs to be some recalculating for just one or two servings. While I dont know if my appetite has fully recovered, I will say that I sure felt healthy eating this flavorful dish.
