Normally this dish is fried chicken pieces coated in a sauce. However, I was watching a healthier version and decided to give it a try. This version, while it looks tasty in the photo, was a little bit of a fail on my side. I didn’t have any chicken thighs on hand (which is what the recipe calls for). So mine came out a bit dry. Also there was 1 ingredient this lady liked to use called 매실청 (a plum concentrate) that I did not have on hand. However, the concept is quite simple of brown the chicken then mix the sauce and reduce, coat the chicken at the end. The recipe ended up being a bit salty and a bit too hot for my taste. I might cut back on some of the red pepper powder, or add a bit more sugar since I like my sauce a bit on the sweeter side. I think if I had the plum concentrate it would’ve added more sweetness too. I put it over some salad greens and didn’t even need any dressing. While this attempt was a bit of a fail, I am willing to try again once I have all the right ingredients and adjust the sauce to taste.
