I have been visiting my parents for a good chunk of the summer. While many of us go insane while staying with the parents so long after being by your own for so long, this time seemed more bearable. This was especially true because for a few days I was extremely sick. I was also just tired and it is always so great to come home and be taken care of. When you are feeling under the weather, low energy, and just in need of good comfort, THIS is the soup to make. My father cooked this up, and it is just so good. Chicken, sweet rice, jujube, ginger, ginseng, garlic, are just a few ingredients in this simple but amazing soup. I even saw that some Korean markets prepackage everything you need so all you need is to buy the chicken to go with it.
If you get tired of just soup you can turn the broth into a delicious 닭 죽- Otherwise known as Chicken Rice Porridge. If your stomach is unsettled and you are still under the weather this is a perfect remedy. I suppose we all have our foods to eat when we are feeling bad, but there is something extremely special about your parents cooking with love for you. It flavors everything just perfect.
