I hate lima beans…with a fierce passion. So you can imagine how hopeful I was when I saw a recipe for a cookie using lima beans. I am positive I have had these before, but never realized these are LIMA BEAN paste cookies. I originally got the recipe from here and I am sure that it is a legitimately good website for the recipe. There were 2 problems though. 1 I didn’t have this “premade” bean paste, 2. I didn’t read until after I made this recipe that this author doesn’t care for overly sweet desserts. I did a combo of things to make the bean paste. I originally got some guidelines from Maangchi’s website where she used the paste to make some dessert buns. The end part was different since I was trying to make the cookie dough, but in the end the mass of stuff had too much liquid and couldn’t hold up shapes very well. So after combining everything and totally slaughtering the cookie shape I baked these little things off. Then I tasted them and was very sad. It was just so “beany” and rather dry. Perhaps if I had a better way to make the paste I think it would make all the difference in these cookies. I didn’t add very much sugar and think I should add more. I would try again, but maybe after some time. The thought of those dreaded lima beans still lingers with me. In end I ate a few and chucked the rest out in the trash. I know it was a waste, but I also knew I wasn’t going to eat anymore of them. I mean what would you have done?
